  1. Preheat oven to 400 degrees. Mix the ingredients by hand lightly. Do not over work the mixture it will result in hard/tough meatballs. Form small balls and place on a cookie sheet, bake for 20 minutes or until golden brown and cooked through.

Corn Beef Nannie’s Way

  1. Rinse Corn Beef and trim off any access fat. Place Corn Beef in Dutch oven cover with water and add the spice packet. Bring to boil, cover and reduce heat for about 3 hours or until tender. Remove Corn Beef and place on a rack, coat the Corn Beef with the mustard sauce. Place in a preheated 350 degree oven for about 30 minutes. Baste with mustard sauce every 10 minutes. Mustard Sauce Place brown sugar, water and mustard in a small sauce pan. Heat until all ingredients are well blended and sugar is dissolved.

One of my favorite mustards to use when cooking when I want a little spice is the Picante Tequila Mustard. So in Carries recipes when she calls out grainy mustard use the Picante Tequila!

  1. Peal your potatoes and cut into bite sized cubes, boil until tender. Drain and do not rinse. Mix mayo, vinegar, mustard, add chopped hard boiled eggs. Fold in potatoes gently with the cucumber or whatever you like to add celery or onion until coated, garnish with fresh chives. Cover and refrigerate or put in a cooler until the cookout is ready!

Nannie’s Deviled Eggs Recipe

Nannie’s Deviled Eggs Recipe

  1. Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. (tip fresh eggs sometimes peel hard add a 1 tablespoon of vinegar to the water) Cover the saucepan and bring the water to a boil over high heat. Remove from the heat and let the eggs stand in the hot water for 15 minutes. Drain. Cool the eggs under cold running water. Peel once cold. Halve the eggs lengthwise and scoop the yolks into a bowl. Mash the yolks with a fork.
  2. Stir the mayonnaise, Picante Tequila Mustard, cilantro, salt, and pepper into the yolks until well combined. Spoon into a quart-size, resealable plastic bag. Snip a corner off the plastic bag.
  3. Squeeze the yolk mixture into the egg halves, sprinkle each stuffed egg with cilantro.
